Nisin is a naturally occurring polypeptide antimicrobial agent produced by Lactococcus lactis during fermentation. It is widely used in the food industry as a preservative to extend the shelf life of various products due to its strong antimicrobial properties.As a food additive, nisin has an E number of E234.
Nisin can be widely used in meat products, dairy products, canned foods, seafood, beverages, fruit juice drinks, liquid eggs and egg products, condiments, brewing processes, baked goods, convenience foods, flavor bases and spices, as well as in the cosmetics industry.

Solubility: Nisin, a light brown solid powder, needs to be dissolved in water or liquid for use, and its solubility varies depending on the pH level. In water (pH = 7), the solubility of Nisin is 49.0 mg/ml; in 0.02M hydrochloric acid, the solubility increases to 118.0 mg/ml; however, in alkaline conditions, it is almost insoluble.
Stability: The stability of Nisin is also influenced by the pH of the solution. For instance, when dissolved in skim milk with a pH of 6.5 and pasteurized at 85°C for 15 minutes, the activity loss is only 15%. When dissolved in dilute hydrochloric acid with a pH of 3, it retains 100% of its activity even after being autoclaved at 121°C for 15 minutes, demonstrating excellent acid and heat resistance.
Antibacterial Activity: Nisin effectively inhibits many Gram-positive bacteria that cause food spoilage, such as Lactobacillus, Streptococcus, Micrococcus, Staphylococcus, and Listeria. It is particularly effective against spore-forming bacteria like Bacillus and Clostridium species.
