Lactic Acid Esters of Mono- and Diglycerides, commonly known as LACTEM or  E472b. LACTEM is produced through the esterification of lactic acid and with mono- and diglycerides. 

Lactic Acid Esters of Mono and Diglycerides are a type of food additive used as emulsifiers in various food products. LACTEM emulsifier helps stabilize emulsions by reducing the surface tension between oil and water.  These additives are commonly used in bakery, dairy, and processed foods to improve texture, consistency, and overall quality. They help to stabilize mixtures, prevent separation, and improve the binding of ingredients.  

Lactem emulsifier is generally considered safe for consumption and approved by the United States Food and Drug Administration (FDA).
